I'll list them in order of technical difficulty easiest to hardest :. In many trios, the pianist has the hardest part technically so if you have a capable pianist, it opens up quite a bit of repertoire. The Mendelssohn for example has a very tough piano part and it took our pianist quite a bit of time to learn it. He just took one section at a time and we chipped away at it. We are still working on the 3rd movement which is very difficult for both piano and violin.

From a technical standpoint, I would rate the Ghost as the easiest of the three. It is not the easiest from a musical standpoint though. I believe it requires more finesse than the Shostakovich to pull off.
We have also played some of the Haydn trios, and they are very nice indeed; and as Buri suggests, might be a good place to start. However, Haydn treated the cello more as a background instrument.
So the cello part in the Haydn trios tend to be technically easy, and rarely does the cellist get the melody.
